Outdoors Gear for Mom

Menu Mondays: Pineapple Upside Down Cupcakes

I like tiny food. I especially love tiny food that is a dessert. I especially love tiny dessert food that is delicious.

Without further ado: Pineapple upside down cupcakes.

Ingredients (makes 8 cupcakes):

  • 2 eggs
  • 2/3 cup white sugar
  • 4 tablespoons pineapple juice
  • 2/3 cup flour
  • 1 teaspoons baking powder
  • 1/4 teaspoons salt
  • 1/4 cup butter
  • 2/3 cup brown sugar
  • 1 can pineapple rings
  • maraschino cherries


  1. Preheat oven to 350 degrees.
  2. Mix together eggs, sugar, flour, baking powder, salt, and pineapple juice.2013-04-21 16.09.15
  3. Melt together butter and brown sugar. If you are me, you will do this in the microwave.
  4. Spray cooking spray on the cupcake tins. Spoon a table spoon of the brown sugar mixture into the bottom of each cupcake spot2013-04-21 16.14.24
  5. Place a pineapple ring on top of the brown sugar. You may have to piece it together a little bit, because a full ring won’t fit. Place a cherry in the center of each.2013-04-21 16.15.44
  6. Top with batter, and pop in the oven for about 20 minutes. Cakes will be ready when they are golden brown and a toothpick poked in comes out clean.2013-04-21 16.19.002013-04-21 16.42.23
  7. Run a butter knife around the edges of the cakes, and flip them onto a cookie sheet. Let cool, and enjoy.2013-04-21 16.45.36
