Menu Monday: Slow Cooker Sweet Potato Chili

We love our slow cooker so much this time of year. Life is so busy with theater, work, and school, so it’s nice to be able to chop something up and throw it in the crockpot, so it’s ready when you get home at night. This recipe is a tasty, easy, vegetarian chili that is really to eat.

  • 1 Can Kidney Beans drained
  • 1 Can Black Beans drained
  • 1 Cans Diced Tomatos (if you can find spicy that’s the best)
  • 1 sweet potato, diced.
  • 1 red onion, diced.
  • 2 cloves garlic, diced.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon cinnamon
  • salt and peppa.

Directions:

1. Start by placing your diced veggies in the bottom of your crockpots.

2013-09-22 09.30.145. Add lid to the crockpot, cook on low for 8 hours, or on high for 5 hours.

2013-09-22 09.30.37In my 2qt baby crockpot I half this recipe and put the other half in a freezer bag. But it is so tasty and delicious.
